CHEMICAL COMPOSITION OF THREE ANDEAN TUBER CROPS

Abstract
The chemical composition of the tubers of Oxalis tuberosa, Tropaeolum tuberosum and Ullucus tuberosus was studied. The results show that the native Andean tubers constitute a mainly rich source of carbohydrates. Also the content of macro- and microelements was investigated. The tubers provide a relatively good source of potassium and iron. The tubers grown in the Czech Republic do not show any considerable differencies in comparison with tubers grown under native conditions.
