Abstract
The authors, in the frame of the Czech assistance projects
for so called developing countries, the observance of human slaughter requirements
enacted in the internationally recognized legislative norms recorded. The ways
of animals handling before slaughter, performance of slaughter act (sticking),
are reported in correlation to stress, blood loss and brain death, which were
visually recorded together with moch of sticking.
Correlation between way of neck sticking, gash length, blood loss and brain
death were observed by blood and live weight and physiological/clinical performance
of slaughtered animals recording.
The above parameters different results revealed, namely in connection with butcher’s
skill, but in all the cases, some internationally recognized slaughter animal
protection legislations were violated. Correlation amongst incorrect neck sticking
starting from inadequate restrain of animals, sharpness and length of knife,
partially or fully missing cut of some vessels are reported. In the extreme
situations observed, in the case of 24 sheep and 24 goats slaughtered in two
cases (Sahel goat male and Maure sheep male) the period between neck sticking
and brain death 290 sec ± 10 sec appeared.
